A new take on a classic favorite, our Tie Kuan Yin (Iron Goddess / 铁观音) black tea kombucha was a hit when we debuted it in Chinatown! Tie Kuan Yin, a type of oolong tea, is one of the most expensive teas in the world as cultivating, harvesting and preparing the tea involves a complicated and backbreaking process. Tie Kuan Yin tea boasts of a rich complex aroma that has both a nutty and floral aroma, and produces unbelievably delicious kombucha...why didn't we think of this sooner? Polyphenols in Tie Kuan Yin tea act as antixoidants to combat oxidative stress in cells and promote better heart and brain health.
Kombucha tea is a fermented drink made with tea, sugar, a symbiotic colony of bacteria and yeast (SCOBY) brewed and enjoyed for 2000 years. The result can taste like something between a fruity apple cider post fermentation!
As the Kombucha culture digests the sugar it produces a range of organic acids like glucuronic acid (by product is glucosamine), gluconic acid, lactic acid, acetic acid etc; vitamins, particularly B vitamins and vitamin C; as well as amino acids, enzymes. Kombucha can contain up to 40 strains of beneficial probiotic bacteria and yeasts.
